I wanted to try Williams' since I had read about it in Texas Monthly. I usually go to Thelma's but felt like a change. I had to wait behind someone who was having a leisurely conversation with the man taking the orders, nothing to to with food. I finally had the chance to order, the only sides were standard pototo salad (looked commercial) and ditto for cole slaw. No fresh veggies to go with the ribs. My order of ribs was very disappointing and the sides horrible! I will never go back.

I have read about this place and decided to give it a try. Maybe I got there on a bad day. The brisket was overcooked and dry. Could be that that is the way the locals like it. I prefer my que to be moist and tender. Williams is overated in my opinion.

All other previous ratings must have been done by employees of WSH because the food was ABSOLUTELY HORRIBLE. I decided to go to WSH for Valentine's Day w/my fiance since we both love BBQ and this site had nothing but great ratings for the place. The ribs had the consistency of beef jerky, the pulled pork was dry and crusty, and the "bread" was 2 slices of supermarket bread! Needless to say, we spent over $20 there and our cravings for great BBQ had not been satisfied. We ended up trying to get at least a quarter of our money's worth by eating the bread and then headed to another BBQ place we'd heard about. Although WSH can be classifed as "inexpensive", you're still paying good money for crappy food... that's way to expensive for me! Conclusion: DO NOT GO TO WSH! NOT IMPRESSED AT ALL!!!!

Williams Smoke House has the BEST barbecue in Houston. Just drive through the surrounding neighborhood will make you stop! All of their meats are smoked on the pit, no oven stuff here. Authentic, is the word. The ribs are sooo tender and juicy, they fall off the bone. The brisket, the same. Their sausages are homemade for them, 100% beef and spices. Delicious! The peach cobbler is to die for, it is made fresh everyday from scratch. The recipe is Hattie Williams' own, and it is a secret. As good as it is, I don't have to know the recipe, as long as I can get the finished product. It is a must. The staff is very cordial and down to earth. Whenever I am in Houston, I always, go to have a meal there and bring back Williams Smoke House. This place is great!

Pros: Good food, Good service, Money's worth

Cons: Parking is tricky

I'm a transplant from New York, born and raised in the San Francisco Bay Area. My grandfather was from Oklahoma and I was raised on great BBQ. Williams' Smokehouse has the best and are always consistent. I've travelled the USA for BBQ and Williams' is one of my favorites.

I'm a big pork rib addict. I have been to most of the places for ribs in town(goode, luthers, pappas,demeris, and ottos) and none have come close the bbq magic performed at Williams. The meat is fall off the bone and the slightly sweet rub is a great complement. The brisket was tender but peach cobbler did nothing for me. It maybe out of the way, but it is definitely worth checking out. Highest Marks!

Pros: great pork ribs, tender brisket

Cons: out of the way, spartan decor

I cannot for the life of me figure out why'designer' chain bbq places like the County Line always get high marks w/ Texas Monthly and other rating sources. I and another friend frequently go to bbq stands in search of the 'Holy Grail' of "Q" and Williams is a solid 9 on that scale. I know they're known for their ribs but the links really stood out to my taste..they just soak up the post oak from the fire. Everything we sampled was so tender it wouldn't stay on the fork.

Pros: sausage

I live and work on the southwest side of Houston. I work in sales, so time is money, but I will take an hour of my day just to drive to and from williams smoke house to get their barbelicious ribs. I also have a seventeen month year old son and if he sees me eating one of these ribs and he does not get his own rib he will fall to the floor and cry until i give him one, but i have taken him to other good barbecue places and he is more excited about being in the restaraunt than eating the food.

As a lover of Texas Barbecue I strongly feel that these are the best ribs ever. Melt in your mouth tender, Tasty, and a great value to boot. Have eaten ribs in over 100 spots and these are second to none.
