To visit Pho Binh is to have a lesson in adaptation. You might try to enter at the door to the left, where the “Open” sign is, but quickly realize the entrance is actually on the right. You might want to linger over the menu—which only woefully ignorant, non-regulars get—but you’ll notice that everyone else orders from memory as soon as they sit down. You’ll try harder next time. This little blue trailer may be short on parking, cash-only and inhospitable to newbies, but it’s touted as one of the best pho (Vietnamese noodle soup) joints in all of Houston—and that’s saying something.
